
Cod Fish Aspic
Description
The appetizer is quick and easy to prepare. Here is a simple recipe for making jellied cod. The cooking process is not exactly quick, but the jelly turns out incomparably beautiful and delicious. Boil a broth from vegetables and fish trimmings. Then strain the broth, adding fish fillet and spices to it. Mix the broth with mayonnaise, add fresh herbs, and let the mixture set (described in detail below). Good luck

Clean the fish, separating the fillets. Peel all the vegetables and chop them finely. Put all the cod trimmings in a pot and add the vegetables and parsley. Cover with cold water, bring to a boil, and simmer over low heat for 1 hour.

Strain the broth and pour 500 ml into a jar separately. Add the fish fillet to the remaining broth, bring to a boil, and cook for 15 minutes. Five minutes before done, add pepper, cloves, and a bay leaf. Then add 20 grams of gelatin.

Remove the cooked fish and transfer it to a deep plate.

Pour the mayonnaise into a saucepan. Gradually add the broth, whisking the mixture constantly. You will get a white jelly; pour off 500 ml into a jar and set aside.

Add the fish and chopped herbs to the remaining jelly. Mix and transfer the mixture to the mold in which the jelly will be served. Place the mold in the refrigerator until fully set.

Remove the set jelly from the refrigerator and pour white jelly over it. Place it back in the refrigerator to set completely. Garnish the finished jelly with vegetables and herbs, then pour clear jelly over it. Let the mixture set and serve.
