Instructions
- 1
Step 1

Prepare all the necessary ingredients for making aspic from turkey breast.
- 2
Step 2

Rinse the turkey fillets, place them in a pot, pour in water, and add chopped carrots and onion. Add black pepper, a bay leaf, and salt, and simmer over low heat after boiling, skimming off the foam, for 40 minutes. Then remove from heat and let cool.

Step 3

Strain the broth, place the breast in a bag and tie it closed. Pour the gelatin into a bowl and cover with 100 milliliters of broth; leave for 30 minutes to bloom. Dissolve the gelatin in a water bath, pour into the broth, and mix.

Step 4

Pour a little broth with gelatin into disposable molds and refrigerate until set. Place cranberries on the set broth, top with a sprig of herbs, and pour a little gelatin so it moistens the berries and herbs and holds them in place as it sets.
- 5
Step 5

Cut the boiled turkey breast into serving-sized pieces and place them on top of the greens.
- 6
Step 6

Fill the molds with broth to the very top and refrigerate for several hours until fully set. Remove the aspic from the molds, invert, and serve.
- 7
Step 7

Serve immediately or slightly chilled.
