
Curd cheese banitsa with jelly
Description
From ordinary pancakes, you can make a very delicious cake. Bake pancakes using any of your favorite recipes. You can substitute sour milk for buttermilk. However, yesterday's pancakes will work perfectly fine for this recipe as well. You can replace dried apricots with chocolate, prunes, or any dried fruit of your choice. It's better to roll them up into rolls and place them into a greased baking dish. For easier removal, you can line the dish with parchment paper. Let it cool down to a warm temperature; this way, it will be easier to slice. Serve with tea, coffee, or milk. The baked dish is ready. Serve at the table.

Dissolve sugar and yeast in warm water. Let stand for 15–20 minutes until a foam forms on top. In a bowl, combine buttermilk, eggs, oil, salt, and flour. Knead into a thick dough. Then mix both mixtures together and let rest for 10 minutes before cooking the pancakes.

Pour boiling water over dried apricots, let them stand until soft. Remove, dry, and cut into small cubes. Mix until a uniform mass is obtained.

Spread each pancake with the cottage cheese mixture and roll them up into rolls.

For the filling, mix sour cream, eggs, flour, sugar, and vanilla. Beat thoroughly.

Grease the baking dish with oil and sprinkle with semolina. Place the pancake rolls in a stack.

Pour the batter over the pancakes. It should fill all the empty spaces.
