Description
A delicious appetizer for any gathering. This spiced holiday-table appetizer will become your hit. You can portion it into individual molds or into one shared dish. For garnish, add fresh herbs; boiled carrots cut into flowers or stars will also work. But at the very beginning, study it. Serve with herbs and sauce.

Place the fish in a pot with water. Bring it to a boil, skimming off the foam.

Then add all the pepper, basil, tarragon, salt, and bay leaf. Simmer the fish over low heat for 10 minutes.

Strain the broth through several layers of cheesecloth. Soak the agar-agar in a small amount of broth according to the instructions on the package.

While the fish is cooling, combine the agar-agar with the broth over heat. Bring the mixture to a boil, stirring, over low heat.

Then separate the fish into flakes, keeping only the fillets. Arrange the pieces in a mold. Pour in the broth with agar-agar.
