Sourdough starter on kumis
Description
The drink is quick and easy to prepare. Below are several simple methods for making katyk starter at home. Usually, the starter is obtained from someone who has previously made katyk. However, if that's not possible, sour cream or buttermilk can be used as a starter. Keep in mind that once the katyk has fermented in a warm place, it will become sour; after this, it must be allowed to thicken by placing it in a cold place. Good luck. It's ready to serve.
Instructions

Step 1

If you don't have starter (ready-made katiq), prepare katiq from scratch. Simmer the milk for a long time (at 90 degrees Celsius) until its volume reduces by 30% of the original.

Step 2

Cool the milk and add the starter. The starter can be either old "katiq," sour cream, or buttermilk. Cover the container with the milk (not airtight) and wrap it in a blanket.

Step 3

After 6-8 hours, the yogurt is ready! Place it in a cold place to thicken.
