1. The recipe for preparing a yeast-free bread starter is actually quite simple. However, there are several important nuances that must be taken into account. First, take 4 tablespoons of flour and sift it. Pour 4 tablespoons of warm water into a small jar. The water should be purified, with a temperature of about 40 degrees Celsius—slightly warmer than body temperature. Gradually add the flour to the water, stirring constantly. Once all the flour is in the jar, thoroughly mix the mixture to eliminate any lumps. Then cover the jar with sterile gauze or cheesecloth and secure it with a rubber band. Place the starter in a warm spot where it can ferment.

2. It should be noted that during the first few days, the starter will not change in volume or texture. This is not a cause for concern. You need to wait 2 days until bubbles start forming on the surface.

3. After 48 hours, you can proceed to the second stage of preparation. Add another 2 tablespoons of sifted flour and another 2 tablespoons of water to the starter. The water, as before, should be around 40 degrees. Thoroughly mix the mixture, making sure to remove any lumps. Cover the jar again with gauze, tie it up, and place it back in the same warm spot.

4. The starter should sit for another 24 hours. After that, it's ready to use. For one portion of bread, you'll need 2 tablespoons of starter. Add salt, water, and sugar to it, and then you can start kneading the dough.

5. Sourdough starter for yeast-free bread, although made from rye flour, can be used to bake any type of bread. Moreover, it stores well in the refrigerator for up to 10 days when kept tightly covered. However, before using it, the starter should be placed in a warm spot for about 1–1.5 hours.
