Appetizer puff pastries with sprats, onion and egg
Description
Homemade baked goods for tea. It’s not difficult to make savory puff pastries with sprats, onion, and egg, and in the end you’ll get a very original savory pastry that can grace any celebration. For extra juiciness you can add a few slices of pickled cucumber or a little mayonnaise to the filling. Because ready-made puff pastry is used, you won’t have to stand at the stove for long. Save this recipe — serve warm or chilled. Perfect with tea.
Instructions

Step 1

Prepare all ingredients. Boil the eggs and let them cool. Take the dough out of the refrigerator 50–60 minutes ahead so it can thaw.
- 2
Step 2

On a work surface dusted with flour, roll out the dough into a rectangle about 3 mm thick, and cut it into small rectangles or squares. I usually get 8–10 pieces.
- 3
Step 3

In the center, place a slice of hard-boiled egg, and salt and pepper to taste.
- 4
Step 4

Sprinkle the eggs with chopped onion. You can use yellow onion, but then it’s best to pour boiling water over it first to remove the bitterness.
- 5
Step 5

Place 1–2 sprats on top, depending on size.
- 6
Step 6

Moisten the edges of the dough with water on both sides and join them. Press the seam along the sides with your hands.

Step 7

Transfer the puff pastries to a baking sheet lined with parchment paper. I also scored the surface with a knife. Brush the dough with egg yolk and sprinkle with sesame seeds. Bake in an oven preheated to 200 degrees for about 15 minutes.

Step 8

Snack puff pastries with sprats, onion, and egg are ready.
