
Herring Appetizer Pastries
Description
Homemade pastries for tea. If you don't like beans, you can use a herring-egg yolk cream with butter instead. Red caviar is quite expensive, so if you're not preparing for a special occasion, you can replace it with artificial white caviar. These pastries turn out very attractive and will take a worthy place on a buffet or festive table. Serve with tea or coffee.

1. Soak the beans for a couple of hours, then boil until cooked.

2. Using a blender, grind the beans into a puree. Add olive oil.

3. Then add the herring and boiled egg to the blender bowl. Blend until you get a light, dense cream.

4. Season the herring mince with salt and pepper. Add the caviar and mix well.

5. Trim the crusts off the Borodino bread, leaving only the crumb.

6. Spread each roll with herring cream, then stack them together. Cut the stack into portion-sized pieces.

7. Decorate the pastries with cream using a pastry bag, then place caviar on top.
