
Snack potato waffles
Description
The recipe won't take much time. Potato waffles are very easy to make. The batter is simply mixed with a spatula. And all the ingredients are always on hand. Leftover mashed potatoes won't go to waste either. If you don't have instant mashed potatoes, just add a bit more corn flour. However, instant mashed potatoes will make the waffles crispier. The baking is ready. Serve at the table.

Mix simple mashed potatoes with eggs and dried green onions rubbed between your palms. Add vegetable oil and stir. The mashed potatoes should not be watery—just mashed potatoes lightly seasoned with milk and butter.

Add the dry instant mashed potatoes and cornmeal mixed with baking powder to the mixture. Stir the dough well and let it rest for about 5 minutes.

Preheat the waffle iron plates, grease them with oil once, and bake thin waffles.

Remove hot waffles onto a rack so they don't get soggy and remain crispy.

But they are most delicious when served immediately, hot from the pan. They go great with herring!
