Savory Cupcakes
Description
Perfect for the table and for drinks. These savory cupcakes are perfect both with a shot of vodka and with a glass of foamy beer. Serve them chilled, and don't forget to garnish with fresh herbs. Instead of cream for the frosting, you can use sour cream of any fat content. The appetizer is ready. Serve immediately.
Instructions
- 1
Step 1

Prepare the listed ingredients. You can use any type of cheese — hard or soft — and any type of sausage — smoked or boiled.
- 2
Step 2

Melt the butter in a deep bowl over a double boiler or in the microwave, but do not let it boil. Beat the chicken eggs into the bowl and add 2 pinches of salt. Whisk everything thoroughly with a whisk, adding milk of any fat content.
- 3
Step 3

Cut the cooked sausage and cheese into small cubes, add them to the mixture, and stir. It is better not to grate the ingredients, so the dough rises better during baking.
- 4
Step 4

Add the flour and baking powder. Fold them in gently. The dough should not turn out dense. If desired, you can add a little vegetable seasoning or chicken seasoning.
- 5
Step 5

Preheat the oven to 180 degrees. Fill the muffin tins two-thirds full with the batter and place them in the oven on the middle rack.
- 6
Step 6

Bake for about 20–25 minutes until golden brown. Be sure to check the cupcakes for doneness with a wooden toothpick. Then turn off the heat and leave them to cool in the oven for 30 minutes—this will keep them from sinking. After that, cool the cupcakes for about 1 hour; decorate them when they are cold. Do not decorate warm cupcakes with cream, as the cream will become runny and slide off the top of the baked goods.
- 7
Step 7

Mix heavy cream with sour cream thickener and a pinch of salt. Finely chop the washed dill and green onion and add to the container.
- 8
Step 8

Mix everything for 2-3 minutes until you get a thick cream.
- 9
Step 9

Transfer the buttercream to a piping bag or syringe and pipe it onto the cooled cupcakes.
- 10
Step 10

Garnish the cupcakes with cherry tomato rounds, slices of marinated mushrooms, or other edible decorations. Serve them at the table.
