Description

The recipe won't take much time. We present a classic recipe for the "Traffic Light" appetizer. It's very simple: fry the eggplants with onion, then arrange them in a long, deep dish. Make three wide hollows and shape the traffic light. Place corn in the center hollow, and greens and tomatoes on the sides. Good luck! Can be served warm or chilled.

    First, wash the eggplants and cut them into small cubes.

    Peel the onion and finely chop.

    Wash the tomatoes and cut them into small cubes.

    Finely chop the herbs.

    Now sauté the onions in vegetable oil; after 5 minutes add the eggplants, season with salt to taste, and fry for 10–15 minutes.

    Take a flat, long dish and arrange the eggplants with onion on it. Make three large, round indentations.

    Assemble our traffic light. Place yellow corn in the center; in the remaining indentations — greens (green) and tomatoes (red).
