Description

The appetizer called “Rafaello and Ferrero” looks just like the famous candies—only the taste is quite different. One type of ball is made with nuts and hard cheese; the other—with chicken liver and onion. This appetizer will definitely be a highlight of your holiday table and will delight the eye of any gourmet.

Step 1

1. Chop the onion and garlic. Pat the washed chicken liver dry with a paper towel and remove the membranes. Pour vegetable oil into a heated skillet and sauté the onion and garlic until translucent.

2. Place the liver and flip as soon as the edges lighten. Season with salt, sprinkle with dried marjoram and grated nutmeg, flip again, and cook the liver through over low heat.

3. Remove from heat and cool completely. Finely grate the hard cheese and boiled chicken eggs. Add grated garlic and ground black pepper. Mix in a small amount of mayonnaise so the mixture holds its shape.

4. Puree the cooled liver with the onion in a blender until smooth and place in the freezer for 10–15 minutes. From the cheese-and-egg mixture, roll balls the size of a walnut and coat them in finely grated hard cheese.

5. From the liver mixture, also roll balls the size of a walnut and coat them in chopped nuts.
