Description
This recipe won't take much time. Make the appetizer "Peacock Tail". It looks wonderful and pairs well with any grilled or roasted meat. By the way, you can also roast the eggplants on the grill. Serve with herbs and sauce.

1. For the appetizer, you will only need the freshest vegetables and herbs. Wash everything and pat dry with a paper towel.

2. Cut the eggplant into slices no more than 1 cm thick.

3. Salt and leave for 10 minutes to release the juices. Then pat dry with a paper towel.

4. Line a baking sheet with parchment paper or foil. Grease with oil. Arrange the eggplants, brush them with olive oil, and bake in the oven for 15–20 minutes at 200°C.

5. While the eggplants are baking, let's prepare the remaining ingredients. Cut the olives in half lengthwise.

6. Cut the cucumber into thin slices.

7. Cut the tomato into slices. Pat the slices dry with a paper towel.

8. Remove the cooked eggplants from the baking sheet.

9. Take a large platter and begin assembling the appetizer. Arrange the eggplant rounds in the shape of a peacock tail, top with tomato rings, then add cucumber.

10. Place olive halves on the cucumber. Garnish everything with parsley leaves. The appetizer is ready! You can drizzle garlic olive oil on top. Enjoy!
