Description
The appetizer is quick and easy to make. The “Midnight Snack” appetizer consists of broccoli, carrots, hard cheese, and eggs. But the ingredient list isn’t “closed”—you can add other ingredients too (for example, cauliflower, boiled beans, and even chicken). This appetizer cooks very quickly and keeps well for a long time. Prepare all the necessary ingredients. Peel the carrots and garlic, and boil the broccoli until tender.

Grate the carrots on a fine grater.

Grate the hard cheese on a coarse grater (if desired, you can also grate it on a fine grater).

Cool the broccoli and chop it finely.

Lightly beat the eggs with a whisk, add the broccoli, carrots, and cheese. Season with salt, add the paprika, and press in the garlic. Mix everything together well.

Gradually add the flour, literally 1 tablespoon at a time. Knead the mixture. If needed, add more flour. The mixture should be thick enough for the finished appetizer to hold its shape.

From the resulting vegetable mixture, form small balls and place them on a baking sheet lined with parchment paper. Bake in the oven for 15–20 minutes at 180°C.
