It works for both holidays and everyday meals. This appetizer takes little time to prepare, but trust me — it's worth it. On a festive table, it looks absolutely stunning. The contrast of the egg white and the bright beet filling, topped with a slice of fish and herbs, makes it unforgettable. Don't blend all the ingredients in a blender; it's much prettier and tastier when you can see them in the filling. Let the finished filling rest for a while so it colors the ingredients better and the dish looks more appealing. Serve the appetizer at the table.

1. Carefully cut the hard-boiled eggs in half lengthwise, separating the yolk from the white base. Mash the yolk with a fork. Grate the boiled beet on a coarse grater.

2. Chop the onion in a blender, cover with water and vinegar, and let sit for 15 minutes. Drain the onion in a colander, letting all the liquid drain off. Finely chop the dill and mix it with the minced garlic.

3. Cut one portion of the herring into small cubes and the other into wide strips. Salt the beet, add a little sunflower oil and several spoonfuls of mayonnaise.

4. Add the egg yolks, onion, herbs, and herring diced into small cubes. Mix the filling well. Place the filling into the prepared halves of the boiled egg white.

5. Garnish with wide fish slices and herbs. Lightly pepper.
