
Appetizer «Cossack»
Description
The appetizer is quick and easy to prepare. You can buy “Cossack” appetizer in almost any grocery store, but it’s also easy to make at home. This appetizer is often served at the lunch table and paired with borscht; a spoonful of this paste is also often added to fried potatoes and used when preparing other dishes. Serve the appetizer at the table.

Prepare the ingredients. Use fatback without the rind; stores often sell this type specifically for making cracklings.

Cut the pork fat into small pieces and transfer to a blender.

Add several cloves of garlic, salt and pepper to taste, and smoked paprika.

Blend the contents of the blender until paste-like. If you do this at low speed, you'll end up with a smooth, creamy, very tasty mixture.

Place the appetizer in jars and refrigerate until ready to serve. Serve the finished appetizer with dark bread, fresh herbs, and pickled cucumbers.
