
Herring Appetizer with Pickled Onion
Description
A tasty appetizer for any gathering. To make pickled onion, it's best to use a sweet onion (but regular yellow onion works too—you'll need to add a pinch of sugar). For fruit vinegar, I recommend apple cider vinegar, as it helps remove the bitterness from the onion. You can also use other herbs instead of dill, such as parsley or cilantro. If your herring is lightly salted, you can add a little extra salt. Be sure to serve this appetizer directly on a slice of bread—it's more convenient. It can be served warm or chilled.

1. Slice the sweet onion into half-rings and thin strips. Transfer it to a bowl and add fruit vinegar. Cover the onion completely with water and let it marinate for 15 minutes.

2. Clean the herring and cut it into small pieces. Remove the crust from the bread slices and cut each slice into four pieces. Squeeze the excess liquid from the marinated onion and add sunflower oil to it.
