Winter Cucumber and Onion Appetizer

Description

Perfect for winter preserves. This appetizer turns out pleasantly crunchy and, with its tantalizing tangy flavor, will remind you more than once on a winter day of sunny summer! The advantage of such a salad-appetizer is that you can use it absolutely any time of year, not only in winter. Quick and tasty. Jars can be stored for up to a year in a cool place.

    Prepare the vegetables: wash the cucumbers and slice them into rounds; peel the onion and cut it into half-moons.

    Finely chop the chili pepper, having first removed the seeds. Then mince the celery.

    Place all the vegetables in one container, add salt, granulated sugar, vinegar, and oil, then mix thoroughly. In this state, the salad should release its juices well and marinate for 5 to 7 hours. During this time, be sure to stir it thoroughly several times.

    Place our salad into sterilized dry jars. Don't forget to add a couple of allspice berries (per jar), then pour in all the juice that formed during the marinating period. Cover the jars with lids and place them in a pot or another container with water (the water should reach no higher than the "shoulders" of the jars). Put everything over heat, bring the water to a boil, then reduce the heat slightly and let it boil for about twenty minutes to sterilize the appetizer (for half-liter jars). After 20 minutes, remove the jars from the water, seal them immediately with the lids, and turn the jars upside down until completely cool.
