
Appetizer of Crab Sticks and Cheese
Description
Perfect for the table and with drinks. A colorful, playful cheese mouse is quite easy to prepare if you have the bare minimum of ingredients on hand. Guests won't be able to stay away from this appetizer—they'll happily taste it. If desired, you can add to the mixture coarsely grated, peeled hard-boiled chicken or quail eggs, chopped pickled cucumbers, or capers. Serve the appetizer at the table.

Prepare the specified ingredients. Instead of cream cheese, you can use moist, soft cottage cheese, lightly salted brine cheese, and so on; instead of the sauce, use low-fat mayonnaise, sour cream, or garlic sauce.

Place the cheese in a bowl or salad bowl. Remove the plastic film from the crab sticks after thawing them at room temperature. Set aside two sticks to decorate the mouse. Dice very finely and add to the bowl. Season with salt and pepper.

Put the sauce in a container, leaving some to spread on the appetizer’s surface. Mix everything gently.

Place the entire mixture, shaping it into a mouse. Cut one stick into rounds and shape the ears and paws from them. Cut the second stick vertically and cut out a tail.

Garnish the plate with fresh greens. Make the mouse's nose and eyes from black peppercorns. Coat the top of the mouse with the remaining sauce so that it turns white, and place in the refrigerator for 30 minutes. Serve the appetizer chilled.
