
Garlic appetizer for winter

Homemade winter preserve. If you don't know yet, serve at the table or store in the pantry.

1. Choose large, firm garlic. Peel it and separate into cloves, trying not to damage them.

3. The recipe is for two jars, so put one bay leaf, one clove, and four peppercorns in each. Pack the jar tightly with garlic.

4. Pour boiling water over the garlic, seal the lids tightly, and leave overnight.

5. The next day, drain off the water. Add a spoonful or two of vinegar to each jar, and fill with chilled brine (made from 0.5 water, salt, and sugar). Sterilize for 5 minutes.

6. If your garlic is very young, sterilize for a minute or two, turn the jars upside down, wait until they cool, and then you can put them in the cellar.
