
Eggplant Appetizer with Vegetables

1. Prepare the vegetables: wash and peel everything thoroughly. Let's begin.

2. Cut the eggplants into small sticks. Add a pinch of salt, but only a little—remember they will also marinate in soy sauce. Put them in a pan and fry until cooked through.

3. Cut the bell pepper into thin strips.

4. Slice the onion into thin half-rings; you can use a Korean-style vegetable grater to slice the carrot.

5. Prepare the marinade: mix vegetable oil with soy sauce, sugar, vinegar, spices, and garlic.

6. Place all raw vegetables and fried eggplants in a convenient container. Pour over the marinade. Mix well.
