
Eggplant appetizer with tomatoes and garlic sauce
Description
Perfect with the table and with drinks. Before frying, salt the eggplant and leave it for 30 minutes in a bowl. Liquid will rise to the surface on the eggplant pieces; drain it before putting the eggplant into the pan. This step removes bitterness. Add tomatoes and basil to the eggplant, and you'll have an excellent appetizer.

Fry the eggplants in sunflower oil until done.
