
Anchovy appetizer
Description
Not everyone likes anchovies because of their distinctive taste. But to those people I always answer with a classic line: you just don’t know how to cook them! You have to know how to handle anchovies. Italians are masters at it, which is why I’m borrowing this recipe from them. So, here’s a recipe for an anchovy appetizer. It can be served warm or chilled.

Step 1

Arrange the anchovies on a large plate. On top, spread half the onion, sliced into thin half-moons.

Pour vinegar over it.

And the juice of one lemon. Leave to marinate for 1 hour.

Remove the anchovies from the marinade and pat dry.

Arrange the anchovies on a clean plate, then layer the remaining half of the onion on top.

Drizzle with olive oil and leave for another 12 hours in the refrigerator, after which the appetizer can be served.
