Description

Of course, this recipe is far from authentic Mexican cuisine—it's my own adaptation in the Russian style. This appetizer is perfect for a small gathering of friends; it turns out delicious and filling! You can modify the filling to your taste, but I'd like to share specifically the presentation and overall look of this dish. For the recipe, it's recommended to use hot chili peppers and a spicy sauce; I used regular spicy ketchup. Any cheese that melts well in the oven will work—you can even use several types at once. I used mozzarella and "Russian" cheese.

    Prepare all the ingredients. Boil the chicken in advance in salted water and separate the meat from the bones.

    Finely chop the meat or break it into fibers and place it in a deep bowl.

    Add the chopped onion, salt to taste, and the sauce. I used regular hot ketchup. If you prefer it spicier, add red chili pepper.

    Mix well. The filling is ready.

    Due to the absence of tortillas for quesadillas, I used lavash. I cut out circles (8 pieces) and halved them. Depending on the size of the lavash, you might end up with up to 14 pieces.

    Place the tortillas for the quesadillas and distribute the shredded cheese and chicken filling on them.

    Roll each into a cone shape and arrange in a circle of 8 on a round baking sheet lined with parchment paper. I used the bottom of a springform pan. Leave space in the center for the sauce.

    On top, place the remaining cups and sprinkle everything with the remaining cheese.

    Bake in the oven at 180 degrees for about 20 minutes. The "Blooming Quesadilla Ring" appetizer is ready. When serving, you can garnish the appetizer with fresh herbs. Serve hot, placing a sauce bowl in the center.
