Canning Tomatoes with Citric Acid

Description

Winter preserving at home. Prepare sterile jars and lids. Wash all ingredients: tomatoes, herbs, peeled garlic. Pack into the jars, pour hot marinade over them, sterilize, and seal. Good luck. Jars keep for up to a year in a cool place.

    Prepare the ingredients. I listed the amounts for a 1-liter jar to make it easier to scale the proportions. In my photo, it's a half-liter jar.

    Place the herbs and spices in a sterile jar. I put a couple of cherry leaves, currant leaves, and dill on the bottom.

    Make the marinade from water, sugar, salt, and lemon. Simply bring it to a boil, stir, and turn off the heat.

    Pack firm ripe tomatoes, garlic, and celery greens into the jar.

    Pour over with hot marinade.

    Sterilize the 1-liter jar for 4 minutes and the half-liter jar for 2–3 minutes. Then seal with a canning wrench. Turn upside down until completely cool.
