
Canned Lecho
Description
A simple way to prepare ahead for winter. First, make tomato juice or puree. Simmer for 10 minutes, add the remaining ingredients, and cook for 20–25 minutes. Pack the finished lecho into jars and seal them. Good luck. The preserve is ready for winter storage.

Prepare the vegetables: wash them thoroughly.

Cut the tomatoes into pieces and chop them. You can also run them through a meat grinder or pass them through a juicer.

Put the tomato puree on the heat and cook for 10 minutes.

Clean the bell peppers of seeds and cut off the stems.

Cut into large pieces.

Also cut the peeled onion into fairly large pieces. Small onions can simply be cut into quarters.

Add the pepper and onion to the tomato.

Mix. Add herbs, salt, sugar, oil, and vinegar.

And cook for 20–25 minutes.
