
Corn Canning
Description
Homemade preserves keep for a long time. For winter canning, use young corn cobs 15–17 cm long. They fit well in 0.5-liter jars. After you pour the marinade over the corn, you can sterilize the jars once more, because corn sometimes “likes to burst.” I hope this simple corn canning recipe will be useful to you. Good luck.

Clean young corn cobs of leaves and silk. Cover the corn with water, bring to a boil, and cook for 5 minutes.

Drain the boiled corn in a colander. Hold under cold running water for 1 minute.

Now you need to dry the corn completely.

Arrange the corn in sterilized jars (500 ml is best). Large pieces can be cut in half.

Into each 0.5-liter jar, pour 2 tbsp. vinegar. Also add several peppercorns and a bay leaf.

The marinade is very easy to prepare. For one liter of water, use 2 tbsp salt and 2 tbsp sugar. Bring the marinade to a boil for 2–3 minutes, then pour it over the corn. Seal the jars of corn and turn them upside down until completely cool. Then store in a cool place.

The preserve is ready. Store in a cool place.
