
Carrot Preserves
Description
Homemade preserves keep well. To can carrots, you'll need spices and a marinade. Anyone can follow this preparation method at home. The carrots turn out pickled, tasty, and slightly crunchy. You can serve them as an appetizer or as an accompaniment to any side dish or salad.

Prepare the ingredients from the list for making carrot preserves.

Sterilize the canning jar using whichever method is convenient for you—over steam or in the oven. Then place the spices at the bottom: peppercorns and a bay leaf; the carrots will become more aromatic and flavorful.

Peel the carrot and slice it into half-moons. If the carrot is small, you can slice it into rounds.

Put the carrots in the jar.

Pour boiling water over the carrots for 10–15 minutes; the carrots will become slightly softer. Then drain the hot water into a saucepan.

Make the marinade with the drained water, salt, and sugar, bring to a boil, add the vinegar at the end, and remove from the heat.

Seal the jar with a lid, turn it upside down, and leave it to cool under a blanket. Then move it to the pantry for storage until winter. Yield: 2 jars of 250 g each.
