Canning Peas

Description

Homemade preserves keep for a long time. First of all, thoroughly sterilize the jars in which you will store the peas. From experience, I can say that it is most convenient to make preserves in 0.5-liter jars. Canned peas can be used in many ways in winter: add them to salads, serve them as a side dish instead of a garnish, or use them in stews and meat dishes. Canning peas at home is not difficult at all. The preserve is ready for winter storage.

    First, sort through, rinse, and clean the peas.

    Pour water over the peas, add salt and sugar. Bring to a boil over medium heat, then simmer for another 20 minutes.

    Drain the peas in a colander.

    Strain the pea brine through cheesecloth.

    Spread the peas into sterilized jars. Pour in brine almost to the top.

    Cover the jars with lids and place them on the bottom of the pot, having first lined it with a towel. Pour in water (up to halfway up the jars). Boil over low heat for 20 minutes (0.5 liter jars) and 30 minutes (1 liter jars). Then remove the jars, screw the lids on tightly, and turn the jars upside down until completely cooled.

    Store peas in a cool place.
