1. Before preparing the pork stir-fry, place the meat in cold water and wash it thoroughly. Then pat dry with paper towels. Cut into small pieces, no thicker than 1.5 cm. Put the meat pieces into a convenient container. Sprinkle with flour. Shake the container well so that the flour coats the meat evenly on all sides.

2. Heat a frying pan, add a little vegetable oil. Place the pork pieces coated in flour into the pan. Sear the pork pieces on all sides over high heat.

3. Transfer the seared meat to a saucepan. Season with salt and pepper to taste. Pour boiling water over the meat, just enough to barely cover it.

4. Prepare the sauce. To do this, chop the peeled onion into small cubes. Grate the washed and peeled carrot on a coarse grater. Sauté the vegetables in a pan with heated vegetable oil. Add tomato paste. Mix well.

5. Pour in boiling water, add a couple of bay leaves. Bring to a boil. Season with salt. Pour the sauce over the stewed pork. Simmer for another 10 minutes over low heat.
