
Sour hares
Description
An old traditional Russian dish. Perfect for a festive table, as it helps keep your head clear even after a generous dose of alcohol. And in the morning, it will be a balm for your soul.

Wash the hare carcass, cut into large pieces, and let the water drain off.

In a deep skillet, simmer the hare meat under a lid until tender. Attention! Do not let the meat burn, but do not let it remain completely pale either!

Open the bottle of cucumbers and pour off more than half of the brine through a cloth or fine sieve.

Pour the resulting brine over the browned hare meat, making sure the liquid covers each piece, and simmer over low heat until fully cooked.

Arrange the finished dish onto plates and garnish as desired (with olives, chopped herbs). Serve the hare while still hot with sauerkraut, cranberry sauce, or sour plum compote.
