Thickener for sour cream at home
Description
The dish is prepared without unnecessary complications. A thick sour cream frosting for decorating cakes is essentially a fluffy mixture achieved by combining sour cream, usually with powdered sugar. The sour cream used as a base for the creamy substance should be fairly high in fat content—33%. Preferably, use homemade or farmhouse sour cream. If sour cream with a fat content of at least 33% is used, no additional ingredients are required to achieve a thick, creamy consistency. The desired thickness can be reached simply by whipping the sour cream with sugar. However, if high-fat sour cream is not available, this recipe can be used instead. Gelatin powder is a universal thickener. The resulting cream holds its shape well after chilling and can be used in light cakes as a standalone cream layer. The finished dessert can be served immediately.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Add cold milk to the gelatin and let it swell according to the instructions.
- 3
Step 3

Beat the sour cream with sugar and vanilla.
- 4
Step 4

Dissolve the gelatin in the microwave or on the stove (without bringing to a boil!) and mix with 2-3 tablespoons of sour cream cream.
- 5
Step 5

Add the gelatin mixture to the sour cream.
- 6
Step 6

Beat for 2-3 minutes. At first, the mixture will be rather liquid. Place the container in the refrigerator, and as it sets, it will thicken.

Step 7

After cooling, the sour cream can be whipped if desired. The consistency will resemble whipped cream. The mixture turns out light and airy. It can be used as a cake filling, as a filling for éclairs or pastries, or as a standalone dessert. If you plan to serve it as a dessert, pour the still-liquid mixture immediately into serving containers; after setting, it will resemble a light soufflé. The dessert only needs to be garnished with fresh berries, chocolate, or fruits.
