
Preparing Ferns for Winter
Description
Homemade preserves keep for a long time. Let's make fern preserves for winter at home. Use fern stalks collected no more than 4 hours ago. Sprinkle the stalks with salt and place them under a weight for two weeks. Then remove the liquid that has formed, transfer the fern to jars, and cover with a brine solution with ascorbic acid added. Store the jars in a cool place. Be careful: before eating the fern, soak it in cold water for two days. Good luck.

After harvesting the fern, no more than 4 hours should pass before salting it. Wash the fern stalks.

Sprinkle salt on the bottom of an enameled pot, place a layer of fern on top, then a layer of salt, and fern again. Arrange the layers overlapping. Place a weight of 1 kg on top and put the pot in a cool place for two weeks. Then remove the pot and drain off all the liquid. Pack the salted fern into jars and cover with brine (1 part salt to 5 parts water), adding ascorbic acid (0.5 grams per liter). Seal the jars with lids.

Store jars of fern in a cool place. Before using it in food, soak the fern in water for two days so the salt is removed.
