
Preparing Chanterelles for Winter
Description
Perfect for winter pantry stocks. Here is a classic recipe for preserving chanterelle mushrooms for winter. Sort through the mushrooms and wash them, then sauté in a skillet until the moisture evaporates. Add oil and salt generously, mix, and sauté until done. Pack the mushrooms tightly into a jar and pour melted fat over them. Seal the jars with lids and store in a cool place. Good luck! Serve at the table or keep in the pantry.

Sort through and rinse the mushrooms, place them on a hot skillet, season with salt, and let the liquid evaporate.

Now add butter and salt to taste, and sauté the mushrooms until fully cooked.

Spread the fried mushrooms into sterilized jars, packing them tightly. Pour the mushrooms with pork fat melted in a skillet. Seal the jars with lids, let the mushrooms cool (do not turn the jars over) and store in a cool place until winter.
