
Birch sap preparation
Description
Fresh birch sap can be stored in a cold place for only 2 days. After that, it starts to sour. So if you've become the lucky owner of a large amount of birch sap, it's worth preserving it for later—either for winter or summer. I'll share with you one method of preserving birch sap. It requires very little time, and the result is a delicious preserved product. Serve it chilled.

Pour the birch sap into a clean saucepan and add sugar.

Then add citric acid and place the saucepan on the heat. Bring the juice to a gentle boil, but do not boil.

Then we strain the hot juice through a cheesecloth.

The container in which you will store the juice must be sterilized.

Pour the strained hot juice into bottles, seal with lids, and leave at room temperature until completely cooled. After that, the juice can be stored in the cellar.
