
Forgotten cookies
Description
The recipe won't take much time. This cookie is called "Forgotten" because after baking it needs to remain in the closed oven for two hours, making the meringue especially crisp and delicious. It's best to store these cookies in a sealed container. You can use any nuts (cashews, almonds, hazelnuts) and toast them in a dry pan for a more interesting flavor. You can make the cookies 3 cm in diameter; they will then resemble small meringue candies. Enjoy with tea or coffee.

1. Finely chop the nuts and chocolate. Mix the sugar with vanilla sugar. Beat the room-temperature egg whites until stiff, then gradually add the sugar and beat with a mixer until smooth and glossy.

2. Gently mix the egg whites with the nuts and chocolate. Place the dough on a baking sheet lined with parchment paper, shaping into circles 5-6 cm in diameter.

3. Bake in a preheated oven at 180 degrees for exactly 5 minutes, then turn off the oven and leave in the closed oven for 2 hours.
