Description

Love for this dish doesn't fade over the years: the kids have grown up, yet they still call the meatballs "hedgehogs" like children do :) Indeed, they look like hedgehogs, especially when you cook them without sauce. The grains of rice stick out from the minced meat, and when fried, they resemble spines. But in sauce, this effect is much less noticeable. Preparing hedgehogs is quite simple, and making sauce for them is even easier. Let me tell you how.

    First, cook the rice in slightly salted water until half-done — about 10 minutes from the moment it starts boiling. You can cook it in a large amount of water, then drain it in a colander to remove excess liquid.

    Peel the onion and chop finely, either using a blender or by passing it through a meat grinder. Add salt. If you're cooking for yourself, you can also add ground pepper and aromatic dried herbs.

    Add the cooled rice to the minced meat with onion.

    Mix thoroughly so that the rice is evenly distributed throughout the mixture.

    Now divide the minced meat and shape it into hedgehog meatballs. Roll each one in flour.

    Heat a pan with vegetable oil and fry the hedgehogs to your desired level of doneness. Some prefer them lightly fried, while others like them crispy.

    Mix the sour cream with tomato paste, add about half a cup of water, and stir well.

    Pour the resulting mixture over the meatballs and bring to a boil. If the sauce doesn't cover the meatballs, turn them over after 3-4 minutes of boiling. Cover the pan with a lid, reduce the heat, and simmer for about 10 minutes.
