
Tongue in sauce
Description
I want to share with you a simple recipe for tongue in sauce! The combination of pickles with the distinct flavor of tongue turns out to be very interesting. For me, it was a revelation at the time that tongue can be used for more than just aspic! Do give it a try!

Step 1

1. Place the tongues, carrot, and onion into cold salted water. Add a bay leaf and parsley root as well. Bring to a boil, skim off the foam. Then simmer over low heat for at least an hour, preferably longer.

2. Let's make the sauce. Melt butter in a skillet and sauté flour in it until golden. Then add chopped onion. When the onion becomes translucent, add pieces of cucumber.

3. Next, pour in the broth and wait for it to boil (if the broth was cold). Then add sour cream and simmer over low heat until the sauce thickens. Add spices and salt to taste.

4. Rinse the cooked tongue with cold water to make it easier to remove the skin. Peel off the skin and slice the tongues into portion-sized pieces. Add them to the sauce and simmer everything together for another 5–10 minutes.
