
Caucasian-style tongue
Description
The dish is prepared without unnecessary complications. It's best to boil the beef tongue in advance and leave it in the refrigerator for several hours, placing it in a bag. This way, it will slice better and won't crumble. The combination of sweet dried fruits and tangy tomatoes gives the dish an exquisite, sour-sweet, incomparable flavor. Serve the dish with vegetables, boiled rice, or green string beans. The ready dish can now be served at the table.

Prepare all the necessary ingredients for making Caucasian-style tongue. Peel and rinse the onion.

Thoroughly wash the tongue and place it in a heavy-bottomed pot. Pour cold water over the tongue and set over medium heat. Bring to a boil, cook for 15 minutes, then drain the broth. Rinse the tongue, place it into a clean pot, and cover again with water. Add one peeled onion, allspice and black peppercorns, then set over medium heat. Bring the water to a boil, reduce the heat slightly, and simmer, skimming off the foam, for 3–3.5 hours. The tongue should become tender and easily pierced with a knife. After cooking, remove the tongue and place it into cold water, then peel off the outer layer. Allow the boiled tongue to cool completely.

Cut the tongue across into thick slices. Place the beef tongue into a high baking dish.

Wash the dried fruits and place them on top of the tongue.

Pour vegetable oil into a frying pan and heat over medium heat. Finely chop the second onion and add it to the pan.

Place the tomatoes in their own juice, add salt, sugar, ground black pepper, and lemon juice. Add the bay leaf, pour in the water, and mix. Put the pan over medium heat and bring to a boil. Cook the sauce, stirring, for 2–3 minutes.

Pour the hot sauce over the beef tongue, shake slightly to let the sauce go down and completely cover it.

Cover the pan with the tongue with foil and place in a hot oven; cook at 180 degrees for 1.5 hours. Serve the ready Caucasian-style tongue immediately at the table.
