
Boiled Tongue with Horseradish
Description
The recipe won't take much time. This is one of the most beloved dishes in many families, and it's also very easy to prepare. If desired, you can add fresh herbs and garlic to the broth for even more flavor and aroma. Serve with herbs and sauce.

Prepare all the ingredients. Peel the onion and carrot, and rinse them together with the tongue under running water.

Bring water to a boil in a saucepan, add a bay leaf, peppercorns, carrot cut into large slices, and an onion scored crosswise. Season the water generously with salt.

Place the tongue in boiling water, reduce the heat under the pot to low, cover with a lid, and simmer for 1.5–2 hours.

Pour cold water into a deep bowl, add a little ice, and place the boiled tongue in it. Keep the tongue in the ice water for a few minutes, then remove the skin and pat it dry with paper towels.

Trim off all excess, slice the tongue itself into thin slices, and arrange on a flat plate. Place a sauce boat with horseradish on the plate alongside and serve.
