
Japanese omelet

In a bowl, whisk the eggs with soy sauce and vinegar.

Heat the oil in a skillet. Pour a little of the mixture onto it. We’ll cook an egg pancake. As soon as you see the egg mixture has set, fold the opposite edges of the pancake toward the center.

Now fold the item in half (lengthwise, not crosswise—this is important!). Slide it toward the edge of the pan.

Now, without removing the first pancake, pour another portion of the egg mixture for the second pancake. The old pancake will attach to the edge of the new one. That’s how it should be.

As soon as you notice the second pancake is also setting, roll the first pancake into the new one (like a roll). The second pancake should end up on top of the first. Keep layering pancakes this way until you reach the desired omelet thickness. Before serving, slice the omelet.
