Prepare the ingredients.

Add the yeast and sugar to warm milk, stir, and place it in a warm spot to ferment for 15 minutes.

While the starter is rising, work on preparing the “tangjong” – this is a cooked dough that gives the bread its extraordinary properties. For this, mix 95 ml of milk and 19 g of flour. Heat while stirring constantly; it will take about 2 minutes.

Sift the flour into a mixing bowl, add salt.
