Description

Homemade treats for tea. Be sure to cook the pancakes over the lowest heat, in a pan with a good non-stick coating. For extra flavor, you can add vanilla to the batter. Serve with tea or coffee.

    Lay out all the ingredients on the table before you start cooking. The milk should be at room temperature.

    Carefully separate the yolks from the whites of four eggs and put each into its own small bowl. Into a separate, handy bowl, place two egg yolks and add 30 grams of sugar.

    Beat the egg yolks with the sugar in a mixer until the mixture lightens in color.

    Add warm milk and vegetable oil to the beaten egg yolks.

    Whisk these ingredients together until foam forms.

    In a separate bowl, stir the flour with the baking powder and sift this mixture into the bowl with the egg-yolk mixture.

    Using a whisk, mix in the flour until all lumps disappear. At this stage the dough should be smooth and flowing, with a consistency similar to rich mayonnaise.

    In a separate dry, clean bowl, put the egg whites and add a pinch of salt. Whip the whites until foam forms; at that point start sprinkling in the 30 grams of sugar little by little, without stopping the mixer. You should end up with a light, airy foam that stays put when you turn the bowl upside down.

    Add the beaten egg whites to the batter in small portions, folding them in completely as you add each batch.

    As a result, you should obtain a very light, smooth, foam-like dough.

    Heat a frying pan over medium heat and brush it with a thin layer of vegetable oil using a silicone brush. Spoon small portions of batter onto the pan to form small pancakes. Set the heat to the lowest setting. While the pancakes cook, cover the pan with a lid and bake one side for about 5 minutes. During this time the pancakes will rise noticeably. If you want really tall pancakes, as soon as the batter sets, spoon a little more batter on top to build up the height of the pancakes, then cover the pan again with the lid. After about five minutes on minimum heat, flip the fluffy pancakes with a spatula and cook the other side for another 3–4 minutes.
