Description

"Mochi" are made with completely different fillings. Berries, fruits, chocolate paste, or nut paste work well here. Experiment to find your perfect filling. I recommend pre‑freezing the filling so it’s easier to work with. Serve warm or chilled. Perfect with tea.

    These are the basic ingredients for the mochi base. As a coloring, I use blueberry juice.

    Combine the rice flour with powdered sugar.

    Pour the blueberry juice into the water and add it to the dry ingredients.

    Mix everything thoroughly. The dough should turn out very liquid. If it is too thick, you can add a little more water.

    Cover the bowl with plastic wrap and place it in the microwave. I set it to maximum power for 1.5 minutes. Then I check the consistency and set it for another 1 minute.

    The flour will cook and turn into a sticky mass like this. Mix thoroughly and let it cool a bit.

    Dust the work surface with starch.

    Pinch off a piece of rice dough, place it on starch, and smooth it out.
