Japanese fried dumplings

Description

The dish is prepared without unnecessary complications. In Japan, people prefer to buy ready-made dough wrappers for "Gyoza" because they need to be very thin, which is quite difficult to achieve by hand. But I decided to give it a try, and I'll tell you right away: it's indeed challenging, but working with this dough is so pleasant! It's incredibly elastic, thin, and doesn't tear. The dumplings cook almost instantly since the sesame oil in the pan should be boiling hot. But let's go step by step. Check out the recipe, and you'll see. The finished dish can now be served.

    Prepare the ingredients. You need good pork mince; I used a fatty piece of pork.

    Wash the onion and cabbage, then finely chop. Remove the tough parts of the cabbage leaves.

    Squeeze the juice from the lemon, press the garlic through a garlic press, and peel the ginger root. Take about 1 cm and finely dice it into small cubes.

    Add cabbage, onion, garlic, salt, black pepper, diced ginger, lemon juice, soy sauce, fish sauce, and rice vinegar to the pork mince. Japanese also add a little sake. Mix the gyoza filling well.

    To prepare the dough, mix 350 g of flour with salt and starch.

    Then pour in a glass of boiling water and mix the dough with a spoon. As it cools, continue kneading by hand. The dough is dense and difficult to knead, so add flour as needed. I used 400 grams of flour throughout the entire cooking process. Wrap the finished dough in a plastic bag and let it cool and rest.

    On the work surface, roll out the dough as thinly as possible. Use a cutter or a glass to cut out circles.

    Place 1 teaspoon of filling on each circle of dough, then shape the dumplings into a half-moon with crimped edges on one side.

    Heat a spoonful of sesame oil (I used a mix of sesame and sunflower oil) and quickly fry the dumplings until golden brown.

    Then pour boiling water into the pan (the water should cover the gyoza one-quarter of the way up, no more). Cover with a lid and cook until all the water has evaporated.

    Serve the ready gyoza hot with green onions and soy sauce. Enjoy!
