
Egg tart (tartlets)
Description
The base of this pastry consists of shortcrust dough and a creamy custard filling. This dessert is sure to delight both adults and children. Crumbly pastry shells filled with a delicate, smooth, and melt-in-the-mouth custard cream. Serve the dessert after it has cooled down. You can decorate each tartlet with a berry or a slice of fruit. Serve cooled or slightly warm.

1. Grate the zest of half an orange. Mix cream cheese, 8 tablespoons of butter, and the zest. In another bowl, mix flour with a pinch of salt. Combine the contents of the two bowls and rub together until a coarse crumb forms.

2. Gather the crumbs by hand to form the dough. Divide it into 12 portions, roll each into a ball, and place them in the refrigerator for half an hour.

3. Pour water into a saucepan, place it over heat, and add sugar. Remove the saucepan from the heat, then pour in milk, salt, vanilla extract, add eggs, and mix well. Strain the mixture through a sieve twice.

5. Remove the dough from the refrigerator, take one ball and place it between 2 sheets of parchment paper. Press it flat with a bowl to form a flat disc. Place the disc into a greased pan, trim off the excess.
