
Egg Roll for Breakfast
Description
This "omelet" can be garnished with any herbs, greens, vegetables, ham, meat, and more. At first glance, making this breakfast seems very difficult, but it's actually much simpler. Serve the dish immediately after cooking, cutting the roll into small pieces.

1. In a bowl, combine the eggs, warm broth, soy sauce, mirin, granulated sugar, and chopped spinach; mix well.

2. Heat a skillet with vegetable oil, pour in 1/3 of the egg mixture, and cook for about 3 minutes until the bottom sets but the top is still runny.

3. Carefully fold part of the egg from one side, forming one layer of the roll.

4. Pour the second portion of the egg mixture onto the side where most of the egg is, roll it into a roll again, pour in the remaining egg mixture, wait briefly, and finish rolling the roll.

5. Place the roll on a bamboo mat and press it to form a compact shape.
