
Egg mousse
Description
This dessert will appeal to girls and women, although it is quite high in calories. It tastes similar to "gogol-mogol," but with a more stable texture. If you replace the apple juice with semi-dry white wine, you'll get an excellent adult dessert perfect for parties. Alternatively, apple juice can be substituted with freshly squeezed orange juice, adding some lemon zest.

Prepare all the necessary ingredients for making egg mousse. Wash the eggs thoroughly, as they will not undergo heat treatment.

Add gelatin to the apple juice and let it swell for 45–60 minutes, or according to the instructions for your type of gelatin. After swelling, dissolve the gelatin and cool it.

In a deep bowl, break the eggs, add sugar and vanilla sugar.

Beat the mixture with a mixer at high speed until the sugar dissolves and the volume increases several times. It will become light and airy.

Add one tablespoon of the egg mixture to the cooled juice with gelatin, and mix. Pour the gelatin into the egg mixture, gently stirring until smooth.

Pour the egg mousse into ramekins or glasses and refrigerate for 6 hours to fully set.
