
Egg dumplings with potatoes and croutons
Description
The recipe won't take much time. The dough for egg dumplings can be prepared in advance and stored in the refrigerator (for 12–24 hours), which will greatly simplify and speed up the cooking process. Serve hot.

Prepare the listed ingredients. Potatoes can be peeled in advance and placed in cold water to prevent them from darkening. For this dish, choose bread with a dense texture so that it doesn't absorb too much oil when frying the croutons.

First, prepare the dough for the dumplings: beat the eggs with salt (about 1 tsp, without a heap) and gradually add the sifted flour.

At the initial stage, mix the dough with a spoon, then switch to kneading by hand.

Knead the firm dough well by hand on a work surface. Let it rest for 10–15 minutes, covered with a towel or plastic wrap.

Meanwhile, cut the potatoes into cubes, place them in a pot with cold salted water, and put on the heat. Cook the potatoes for five minutes after the water begins to boil.

While the potatoes are boiling, make dumplings from the egg dough. To do this, divide the dough into 3-4 parts and roll them into sausages 1.5-2 cm in diameter. Cut the sausages into 1 cm thick pieces.

After cutting, place the egg dumplings on a board dusted with flour so they don't stick together.

After five minutes of cooking, add the dumplings to the pot with the potatoes, carefully placing them into the boiling water.

Boil the potato dumplings for 7-10 minutes. Meanwhile, cut the bread into cubes and place them into a preheated pan with sunflower oil poured on the bottom.
