
African-Style Eggs in Tomato
Description
The recipe won't take much time. The homeland of this spicy, hearty dish is hot Tunisia. Shakshuka can be made in a cast-iron skillet in the oven for extra health benefits, but a simple stovetop will handle it just as well. You can use all the spices in the recipe, or leave out any you don't like. Cook with pleasure.

Prepare the necessary ingredients. Wash the vegetables; peel the onion and garlic.

Cut the sweet and hot peppers in half, remove the seeds and stems. Dice into small cubes.

Heat olive oil in a pan (cast iron if possible), add cumin, finely chopped onion and garlic. Cook until the vegetables are tender. Now add pepper, paprika, nutmeg, and coriander: stir and cook for two minutes.

Add peeled tomatoes in their own juice. Cook until the liquid evaporates and the sauce thickens, about 10-15 minutes.

Using a spoon, make wells in the sauce for the eggs. Crack the eggs into them, season with salt and pepper to taste. Cover with a lid and wait until the eggs are cooked to your liking. We like the yolk to remain runny.

Sprinkle with chopped parsley; serve the fried eggs hot on warmed dishes.
